Slow Cooker Teriyaki Chicken
Around this house Wednesday nights are deemed crock-pot nights, especially during marathon training season. My training group meets on Wednesdays at 6:30, right at dinner time. Using the slow cooker makes it easy for Andy to eat dinner and not have to wait for me, and when I get home dinner is ready. I was getting sick of our normal pulled pork so I went on the search for something new. That is when I found this pineapple teriyaki chicken recipe on Spark People.

I had all of the ingredients already {not shown-brown sugar & pepper}. I was excited to use my new, smaller crock-pot I picked up from Target for just $10. The one I normally use is huge, this one is perfect to make a meal for two people.
I cut the original recipe in half and added green peppers.
What you need:
1/4-1/2 cup of pineapple juice
1/4-1/2 cup soy sauce
1 tablespoon brown sugar
handful of green peppers
couple twists of fresh ground pepper
pineapple slices
1 pound of chicken (I used 6 strips cut into cubes)

In a bowl mix pineapple juice, soy sauce, brown sugar, & pepper in a bowl
Place chicken in crock-pot
Place pineapples on the chicken
Pour mixture in
Add green peppers
Cook on low for 7 hours

I served mine with Trader Joe’s brown rice. It only takes three minutes to make!

I didn’t thicken up the sauce and I wish I did. The chicken was on the dry side but had a good amount of flavor. Next time I will also reserve some fresh pineapple to put on top after the meal is prepared. I think this would be great with some broccoli added as well!

Overall I really liked this meal, it was super easy to make! It will be something I make again soon. That puts my total to three crock-pot meals I can make. Now that I have the smaller crock-pot I hope to try more things (the larger one burnt a lot of food).

I cut the sodium down a bit by using only half of each seasoning envelope. I also substitute the water for beer/wine/apple juice. Yum!
Your recipe looks amazing too. Can’t wait to try it out!

February 8, 2013 at 3:17 am (131 days ago)The only thing I’ve done successfully in my crock pot is pulled pork. Otherwise, I feel like most things end up smushy and kind of weird tasting. I do like the sound of teriyaki chicken, but I feel like I could just marinate it all day, and cook it on the stove top in about 10 minutes. I LOVE that frozen brown rice, though… it’s so handy to have around!
