Pumpkin Chai Cookies

If you have been reading my blog for a while you probably know how obsessed I am with pumpkin. I saw this recipe pop on Pinterest and I knew I had to try it out!

I got all my supplies together (butter not show):

Here is what you need {recipe from Pass the Sushi}:

1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup sugar
1/4 cup chai concentrate
1 large egg
1 teas vanilla extract
1 and 3/4 cups all-purpose flour
1/2 teas baking soda
1/8 teas salt
1/2 teas chai spice mix {found here}
22-24 Pumpkin spice Hershey’s Kisses

Combine the butter and sugar in the bowl of your stand mixer and cream at medium speed until fluffy, or with a hand mixer, for about 2-3 minutes. Add the egg, chai concentrate,  and the vanilla, mix until combined. Add the flour, baking soda, and salt, scraping down the sides of the mixing bowl as necessary. Cover with plastic wrap and refrigerate for 1 hour.

I read several comments that said their dough was sticky after an hour. I was worried but mine turned out perfect!

While the dough was chilling I mixed together my spices. I actually couldn’t find ground cloves or cardamom so I used a dash of dark brown sugar (which was another suggestion from another comment and all spice).

After an hour preheat the oven to 325*.  Pull the dough out of the fridge and roll the dough into 1 inch balls. This recipe should make 22-24 cookies (I got 23). Put the cookies on a parchment paper {which I was out of and I didn’t realize} lined cookie sheet and sprinkle with the spice mixture. I also added thumb prints for the kisses later.

Bake the cookies for 12-15 minutes.  While they are baking unwrap the kisses. Once the cookies are done pull them out of the oven and added the kisses. Don’t press down on the kisses or else they will melt!  Let the cookies cool completely before enjoying!

I think the pumpkin kisses on their own are really sweet. The cookie balances out the flavor since it is more of a biscuit type cookie.  I’m going to try these again after I can find the cardamom and ground cloves, or maybe I’ll put my own twist on them again!
